This topic looked so sad without any topics in it! so I thought I'd add a favorite recipe.

My friend Liddy collected a number of recipes from friends and family before she passed away from Ewings Sarcoma in 2004. She put them together in a book which was distributed among her friends, and this is one that I had made for her that she loved. It’s a recipe I adapted from one I cut out from a magazine years ago. I can never make it without thinking about her. It’s a wonderful breakfast, and holds up well for leftovers.

3 Tbs butter
4 (large) to 6 (small) apples, peeled, cored, and cut into slices
1/3 cup sugar
1 tsp cinnamon
3 eggs
3/4 cup flour
3/4 cup milk
1/8 tsp salt
1 Tbs sour cream (I've made it without and it's fine)
1 tsp lemon zest (if I don’t have a lemon handy, I just use a squirt of lemon juice)

Preheat oven to 400 F. Spray 9-in pie pan with non-stick cooking spray. Melt butter in a saute pan over medium heat. Add apple, sugar, and cinnamon and saute, stirring constantly, until apple begins to soften and brown lightly, about 5 minutes. Remove from heat and set aside.

In a large bowl, whisk eggs until lightly frothy. Add flour, milk, sour cream, salt and lemon (zest or juice) and whisk until a smooth batter forms.

Pour batter into pan. Spoon apples evenly over batter and put into oven. Bake until puffed and golden brown, about 20-23 minutes. Serve immediately. Makes 8 'pie' sized slices.

I just made the dutch apple pancake for my husband. I used splenda and whole wheat flour it turned out great. He has heart problems and diabetes so I try to make things more healthy for him. I thought it was tasty too. It was an easy recipe to make.
