It's that time of year and the garden is producing tomatoes up the wazoo so I made a few types of salsa. The first in the quart jars is Black Bean, Roasted, Corn, and Red Pepper Salsa.
First the veggies - Red onions, red peppers, green peppers, green onion, jalepenos, oven roasted corn, garlic cloves and spices.

Two bags of boiled black beans

Mixed with lemon, lime, balsalmic vinegar, olive oil, salt, black pepper, cayanne pepper, basil, oregano, cilantro and canjun spice.

It was late when I started the Cherry tomato salsa and forgot to take pictures of the prep but basically it's just cherry tomatoes either halved or quartered, red pepper, jalepeno peppers, white onions, garlic cloves, lemon, basil, oregano, salt and pepper.
Here's the final tally - 5 quarts of Black Bean salsa and 4 quarts of Cherry tomato salsa.
