I love lemon chicken. More than that I need a quick meal to fix when I am get home from work and am feeling tired. This tastes great and is so easy.

During the prep I throw some egg rolls in the oven and turn on my rice cooker. Just heat oil in a pan and throw in some cut up chicken breast and brown. Then add just one tablespoon of chicken stock and a two tablespoons of lemon curd. The lemon curd is very thick but melts quickly. You may need more or less depending on your tastes. (Dickinsons makes a real good lemon curd sold in my Frys grocer next to the jams and jellies).
