I got this from a good friend who lives in New Orleans.
It was her grandfathers special recipe!

River Road Shrimp
Serves 6-8

1 Stick Butter
¼ cup extra virgin olive oil
6 whole cloves garlic
2 bay leaves
Hot sauce
½ tsp dried rosemary
2 lbs unpeeled shrimp (doesn't matter what size)
1 tsp salt
¼ tsp pepper.
½ cup dry white wine

Melt 1 stick butter and ¼ cup extra virgin olive oil in a skillet with 6 cloves of garlic.

Add 1-2 bay leaves, 3-5 drops hot sauce and a good pinch of dried rosemary.

Saute at low heat until garlic is soft. Add shrimp unpeeled.
Toss to coat and cook 8-10 minutes or until the shrimp are just pink.

Midway though cooking, add 1 tsp salt, ½ cup dry white wine and a good dash of pepper.

Serve with hot French bread.


I've found if you are having a sit down dinner, its easier to peel the shrimp before. BUT its a lot of fun to put a some newspaper on the table, get some good wine and/or beer, good friends and sit around for an hour or two, gabbing, peeling and munching on shrimp.
