Deejays Spicy Veggie Burgers
2 cups Black Beans
2 cups Lentils
2 cups Black Eyed Peas
2 cups onions
2 cups carrots
2 cups cabbage
2 tablespoons Deejays All Purpose Rub
2 Tablespoon Hot Italian Sausage Spice
1 teaspoon Worcestershire powder
1 tablespoon course black pepper
1 tablespoon granulated Garlic
3 eggs
4 handfuls Italian bread crumbs
Soak beans until doubled in size. Boil beans until tender then drain and rinse. Mash Black eyed peas and Black Beans with a fork to break them up. Leave Lentils whole. Throw carrots, cabbage and onions in food processor until almost a pulp. Mix all ingredients. Add just enough bread crumbs to make mixture hold together but not to dry. Fry in canola oil.






I've also used roasted red peppers, portabella mushrooms, button mushrooms, sundried tomatoes, jalapenos etc. This recipe was developed as a labor of love for my BIL who is having some medical problems right now and is trying to control doabetis, blood pressure and chloestoral problems. He's a REAL meat eatter and loves them! I actually surprised myself myself when I tasted these - they are great! The bean combination with these veggies seems to be a perfect replacement for meat. The key is getting the water out and flouring the burgers skightly before frying so the "meat" carmelizes when fried.
