If you know me - you know I HATE to cook - so I'm all over simple recipes that you can throw together in less than 30 minutes. Here's one I tried tonight and the kids loved it. Hooray. Points for me.

You'll need:
1 TBSP Extra Virgin Olive Oil
1 or 2 chicken breasts - cut into bite sized pieces
1 Garlic Clove - pressed
2 tomatoes - diced
1 zucchini - quartered and diced
1 TBSP Basil
2 TBSP Balsamic Vinegar
Optional (but I added it) 1/2 cup Sun dried Tomato Basil Pesto
Your favorite pasta - we used bowtie
Heat the oil over medium heat, add the pressed garlic to brown then add the cut up chicken. (or if you're like me - add the frozen chicken breast and wait for it to thaw then cut it with my spatula..hee hee) While the chicken cooks, cut up the tomato and zucchini and start to boil the water for the pasta. Get the pasta cooking while you finish up with the chicken. When the chicken is done remove it from the pan and add the veggies, basil and balsamic vinegar. Stir fry it till the zucchini is tender crisp. Add the chicken back in and then add the pesto. Mix it up - drain your pasta and combine for a yummy and easy meal.
