My fabulous friend Monica brought this cheesecake over for a Girls Night Out and WOW! It is amazing! Although I haven't attempted making it myself - trust me - the finished product is well worth it! crust: 1 1/2 c graham cracker crumbs, rolled fine 3 T sugar 6 T butter Mix crumbs and sugar add butter press firmly into bottom of springform (10 inch) pan. slightly up sides Filling 3 8oz pkg of cream cheese - softened (just leave them out for a little while) 1 C sugar 3 Eggs 3/4 tsp vanilla (I use a powder form that you have to get at a specialty food market) the liquid is fine 2 tsp. lemon juice (i use fresh, but if you don't have it the bottle is fine)
Beat cream cheese well, should be fluffy. Add sugar little at a time. Add eggs ONE at a time, then vanilla. mix thoroughly. Add lemon juice and beat for about a minute more. Pour into crust. Bake 300 degrees F for 55- 60 minutes. Pull from oven and top with topping and continue to bake. Topping: 1 pint (2 C) Sour cream 3 T sugar 1/2 tsp vanilla Whip sour cream add sugar gradually, then vanilla. pour over cake and bake for 10 minutes at 300 degree F. cool completely. Refrigerate. Serve - yummy. NOTE: you know your cheesecake is cooked when the center is still a little jiggly. This is something you just have to see for yourself. Too jiggly= not done enough . Not jiggly= overdone.
