This I made the other day becuase I found some beautiful beets at the Whole Food Market and just had to make a soup with them. I don't know why I 've never even heard of beet soup but it was bloody cold out. Anyway ...
I lovebets but I have never had the other than pickled. Mama always pickled beets.
I should have taken picture of the lovely veggies but didn't. I made a wonderful soup I guess I will call Beet Soup being it was the thing in the pot that I focused around.
So todays adventure is to make a beet soup of some sort.
2 large onions rough chopped
3 large Beets diced
Beet greens and stems finely chopped
6 or 8 carrots diced
1/2 a celery bunch diced
4 small potatoes diced
1 large can of diced tomatoes
4 pieces of kielbasa about a pound diced
2 teaspoons of basil
salt and pepper
about a 1/2 inch of pasta broken up into inch pieces
Instructions brown onions in a bit of oil or butter add about 1 gallon of water and throw everything in except pasta. Let it simmer for about an hour. Add cooked pasta. It is yummy!

Oddly enough the tomatoes where an after thought. The beets seems to loose their sweetness after cooking but when I added the tomatoes the flavor of the beets was enhanced and poped right out. Go Figure?
