Got a lot of tomatoes from the garden? Here's one of my favorite tomato dishes:
Take some large tomatoes and cut them into slices 1/2" to 3/4" inch thick. Brush olive oil on both sides and put the tomatoes on the grill (I use a grill pan, but foil also makes this easier) over low flames for a few minutes--just until heated a bit. Remove them, spread a layer of pesto on the the side you just grilled, and add a layer of grated mozarella cheese (I've only tried this with the low-moisture stuff) over the pesto. Put them back on the grill until the cheese is melted--maybe five minutes.
This is great for vegetarian friends, or you can serve it as an appetizer with a good Chianti sometime when you're grilling steaks. I've never had leftovers with this one.

I definitely want to try this, but I can't just yet.
Right now I have the basil, but I don't have any ripe tomatoes. Next week I'll probably have around 30!
Why does that always happen?????????????????

Anybody who wants to get rid of tomatoes from her garden can ship some to me. I LOVE fresh tomatoes, and I don't grow 'em myself.

I have lots of green tomatoes right now, and 2 types of basil---so hopefully in a week or so the tomatoes will ripen and I will be trying this recipe (or "borrow" some from my neighbor) LOL
--sounds delish!
anyone have a recipe for fried green tomatoes ?
