I remember my mother making this stuff when I was 8 or 9... and I like it even better today than I did then!
Ingredients:
1 large pkg. Velveeta cheese
1 or 2 cans Rotel Diced Tomatos & Green Chilis (Original)
1 bunch green onions
1/2 tsp chili powder
1 dash cumin
You can make this hotter or milder by adjusting the ratio of cheese to Rotel: 1 can is pretty mild, 2 cans is spicy. You can also add a small package of cheese to make it milder.
Start by Cutting the Velveeta into 1" cubes. Place it and the Rotel in a large bowl and microwave on medium heat. NOTE: It's really important not to burn the cheese; it happens easily so don't leave it on too long at once. Heat for a minute or two, then stir, heat another minute, then stir again.
Dice the green onions.
Once the Dip has become mostly smooth, add the onions. Keep heating and stirring until the mixture is perfectly smooth, then add the chili powder and cumin. The amounts of these can be adjusted to taste. Serve with restaurant-style tortilla chips.
You can also experiment with adding sausage, chili, or anything else into the dip. Use your imagination!

Yummm!! This is the type of snack where I can sit down with a bowl of dip and a bag of chips and before I know it... it's almost gone!! Very dangerous for the waistline but sooo good!

A good friend has a super secret Chili dip recipe that consists of Velvetta and a can of Hormel Chili.
This sounds so much better!

And I have done exactly that! I have to force myself to split it into two containers each time I make it so there will be some left the next day...

I've tried the Hormel Chili (no beans) with Velveeta, but it was a flavored Velveeta cheese in the smaller blocks/cartons. Can't remember which flavor it was.
I cut into 1" cubes, then add the chili and microwave it to melt the cheese than put in a small slow cooker crock pot.

Yes, and Ann makes me a separate batch that is mild, because the hot is too hot for me (I'm a big sissy) One a different note, that stuff Hormel puts out in cans is NOT chili. In the coming weeks, I am going to post my chili recipe for your approval (I've been perfecting it for almost 30 years)
