I love saurkraut and it's so easy to make and so much better if you make it at home.

I use an empty cheeseball container to ferment it in. It'll hold two heads of cabbage will be give you about 5 quarts of kraut. Here's a picture from a batch I made last year:

.........New Kraut just started......................Kraut after two weeks (see the brine forming)

Simply peel off the outter damaged leaves and wash it well.

Cut the heads in quarters and remove the core.

Slice the cabbage very thin or use a mandolin if you have one.

Put about 2 inches of cabbage in the jar and squash it down hard.

Sprinkle a few tablespoons of salt on top.

Keeps layering until your done and finish with a layer of salt.

Put a samll plate on top and a zip lock bag filled with water to weigh it down. Don't put water on the cabbage.

Put the jug in a cool place at about 40 to 50 degrees and check it every week or so pounding down the cabbage when you do. You start to see water frming in the bottom after a few days and in about 6 to 8 weeks you'l have great tasting kraut!

Rinse it in plain water before eatting to get rid of the extra salt.

Here's a pot of kraut-cabbage soup and smoked kielbasa I made in the spring. Boy it hit the spot this weekend with all the cold we've been having!

I LOVE sauerkraut! When I get a hot dog, I usually ask for more kraut than dog.
Interesting though. I always swore it had vinegar in it.

Hey Debi, is the recipe the same as with Mason jars?

Alisa - I love this stuff! You don't even have to cook it until you eat it. Well you have to heat it anyway.

Ellen I'm not sure what you mean? I can it after it's fermented and it's the same. Is that what you mean?

You will swear it has vinegar in it but it doesn't Although we like to sprinkle a few drops of balsamic on it on hot dogs. What it is - the salt draws the water out of the cabbage and makes a brine and that makes it takes like vinegar.

There are recipes that use vinegar but I like this one best - very clean flavor and all natural. Caraway seeds are good in it too. One of my forum memebers didn't believeit would work without vinegar and he tried a recipe with vinegar and did like it at all. There's another method that you add whey (as in curds and whey) but if you don't make cheese you have to steal the whey from something else like riccotta cheese or something.

Oh and notice unlike store bought kraut not only is there NO preservatives but there's no sugar, corn starch or any of that other stuff that adds calories!

Your welcome hon! It's all about temperature - hmm did I post that? CRS!

Don't be afraid to add stuff like dill or mustard seeds or some other spice you like. And did I mention rinse it so it's not really salty?
