Oh my, sorry to not see this sooner. It was so easy.
Corned beef - cut in half
1/2 cabbage
3-4 small potatoes
pepper
no salt
pickling spices from corned beef
1/2 onion
1 few carrots
1-2 beers
water to cover it all
place on high for an hour
then low for 4-6 hours or until you get back from work.

Did you want to make the corned beef or buy one?
Corned beef is the first stage of making pastrami - it's just brined brisket. You can get a big ole brisket at say 10 to 13 lbs and make about 6 regular sized corned beefs for less than 1/3 the price of pre brined store bought brisket.

Slow-Cooker Corned Beef and Cabbage from The Best Slow Cooker Cookbook Ever
My family rates this 5 stars and they are a picky brood!
makes 6 to 8 servings
4c hot water 2 T cider vinegar 2 T Sugar 1/2 t fresh ground pepper 1 large or 2 med onions, cut into wedges 1 (3 lb.) corned beef round or brisket packaged with spices 8 small while or yellow potatoes, scrubbed and cut into quarters 2 head of green cabbage (about 1 1/2 lb.), cored and cut into 10 wedges
In a 6-quart electric slow cooker, combine the water, vinegar, sugar, pepper and onions, mixing well. Place the corned beef in the mixture. Scatter the potatoes over the top and along the sides.
Cover and cook on the high heat setting 4 hours. Remove the lid and scatter the cabbage wedges over the top. Cover and continue cooling on high 3 to 4 hours longer, or until the beef is tender. To serve, carve the beef into slices and serve with the cabbage and potatoes, with some of the cooking liquid spooned on top of the beef to keep it moist.
I add carrots, scrubbed and cut into 1 inch chunks, during the first cooking.

Thanks ladies. I have to make Dinner for my incredibly proud Irish Father tomorrow. My slow cooker is my best friend but I hadn't thought of using it for ST. patties day.

Did you know that in Ireland they don't eat corned beef and cabbage on St Patty's Day? That's an American custom. They eat what they call boiled bacon and potatoes sometimes wit cabbage. Most Irish don't even celerbrate St Patty's Day and some even get upset about it.
The boiled bacon is what we would call pork butt or boston butt that has been cured like a ham.

We were talking about that today. According to my Mom who had the Irish immigrant parents, NY Irish bought the cheap cuts of brisket from the Jewish butchers. I dont even think I even like Corned beef unless Its in a sandwich at Katz's deli! Anyway.... tradition, gotta love it.

Brisket is such a tough cut if not cooed to 200 degrees or more they used to practicially give it away. The only thing they used it for was pastrami and corned beef. The southerners used it for BBQ but other wise they had one good day to get rid of it - ST Patty's day! Now so many DIYers use it they jacked up the prices.
Go Figure!
I love homemade corned beef and pastrami - it's one of my signature recipes and most requested on the website and forum. Like everything else home made is always better. Just bought a new professional slicer just for the sammies!
